INGREDIENTS:

For Beans:
1/2 of a chopped shallot
1/2 chopped green bell pepper
6 sliced cloves of garlic
1 tbs tomato paste
1 can cannellini beans
1/4 cup coconut milk
1 tsp salt and pepper (or to taste)

For potato wedges:
Baby yellow potatoes
1 tsp each:
Salt
Pepper
Garlic powder
Dried thyme
Dried basil

Steamed Bok Choy and Broccoli

INSTRUCTIONS:

Chop attaches and saute until softened. Add beans, tomato paste coconut milk and spices. Let simmer for 2-3 mins. For wedges chop the potatoes and coat in oil and spices. Air fry at 380°F for 25 mins. Steam off bok choy and broccoli for the complete bowl and enjoy.
