INGREDIENTS
1 1/2 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp allspice
1/4 tsp nutmeg
3/4 cup coconut sugar
1/3 cup melted vegan butter or coconut oil
3/4 to 1 cup plant milk
1 large very ripe plantain
INSTRUCTIONS
Preheat oven to 375°F. In a large mixing bowl, add flour, baking powder, baking soda and spices. Whisk then set aside. Mash plantain in a separate bowl then add sugar, plant milk, and melted vegan butter or coconut oil. Mix until incorporated. Add both wet and dry mixes together until batter forms. Line muffin tray with baking cups. Scoop out batter and distribute evenly into the tray. Bake for 20-25 mins. Let cool and enjoy!
