INGREDIENTS:
For Chickpeas:
1 can chickpeas
1/4 chopped onion
1/4 chopped bell pepper
1 tbs garam masala seasoning
1 tsp paprika
Salt and pepper to taste
For Mushrooms:
4 white mushrooms
1 tsp each
Ground coriander
Garlic powder
Onion powder
Rosemary
Salt and pepper to taste
Green plantain
Fresh greens

INSTRUCTIONS:
Chop aromatics and sauté along with chickpeas and spices until onions and peppers are soft and chickpeas are cooked through. Peel and chop green plantain for tostones about an inch thick. Fry all pieces until slightly golden. Remove from oil and smash with flat surface then fry again for 2-3 minutes on each side. For mushrooms, chop and get into bowl with some oil and season, toss to coat and air fry for 15 mins at 375°F. Assemble bowl with chickpeas, fresh greens, tostones, steamed or roasted veg of choice and mushrooms.
