1 cup plant milk
1 tsp lemon juice
2 cups flour
3-4 tbs cinnamon
2 1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 cup + 2 tbs sugar
1/4 cup + 2 tbs melted coconut oil
1 tsp vanilla extract
1-2 cups chopped apples

Preheat oven to 375°F. Combine lemon juice and plant milk and set aside to curdle. In a bowl combine flour, baking powder, baking soda, cinnamon and salt. Mix and set aside. In another bowl combine sugar, oil, vanilla extract and plant milk. Mix. Combine wet and dry ingredients until combined, don’t over mix! Few lumps are fine. Then fold in apples. Scoop into muffin pan lined with baking cups or oiled. Bake for 20-25 mins. (Optional: brush tips with vegan butter and dust with cinnamon sugar) Let cool and enjoy!
