INGREDIENTS:

2 tortillas of choice

1 can of chickpeas

1/4 cup chopped bell pepper

1/4 cup chopped onion

Vegan cheese of choice

1/4-1/3 cup bbq sauce of choice

INSTRUCTIONS:

Saute onions and peppers in a heated skillet until translucent. Add in chickpeas and cook through. You could also mash some of the chickpeas for added texture but this is optional. Once cooked, turn off the heat, add in your bbq sauce and fold it in with the stir fry. In a separate skillet heat your tortilla and add a layer of cheese. Layer the bbq mix on top and add another layer of cheese (if desired). Put final tortilla on top and flip to cook evenly. Once cooked, cut and serve.
