Had this dish in Portugal recently and fell in love with it as I haven’t had beet prepared this way. So I knew when I got back I had recreate it. This is a great dish to serve at parties or a nice dinner and serves as an easy and delicious treat. Try it out with the recipe below.


2 beets

Cashew Cream Sauce

2/3 cup soaked cashews
1/4 cup water
1 tsp salt
3 tbs nutritional yeast
1 tbs almond flour (optional)
1 tsp lemon juice


Steam your beets for around 30-40 mins or until fork tender. Let cool slightly and then peel the skin off. Cut off the root ends and slice the rest of the beet thinly. Meanwhile add in all cashew sauce ingredients and blend until smooth and creamy. Plate the beet slices, add dollop of the cashew sauce, garnish with micro greens and hemp seeds along with a drizzle of olive oil. Serve and enjoy
