2 cans young jackfruit

½ chopped red onion

½ chopped red bell pepper

1 ½ tsp salt & pepper

½ tsp allspice

1 tbs dried thyme

Veggie stock

1 tbs browning sauce

2 tbs brown sugar

3 cloves garlic

2 scallion

½ green bell pepper

¼ white onion


In a food processor blend the cloves of garlic, scallion, green bell pepper and white onion. Pour over your drained and rinsed jackfruit and let marinate for at least 20 mins. Once marinated, In a large pot heat on medium with a little oil and add the marinated jackfruit to sear for 8-10 mins. Meanwhile chop the red onion and red bell pepper. Once seared add the chopped pepper and onion. Push the mixture to the side of pan and add the brown sugar and let melt down until it just starts to smoke. Saute all together. Add salt, pepper, thyme, allspice and browning sauce. Season to taste. Add in enough veggie stock to cover the jackfruit and simmer for 5-10 mins. Serve over rice and enjoy.
