For Chipotle Jackfruit
2 cans young jackfruit
1 tbs minced garlic
1 1/2 tsp salt
1 1/2 tsp onion powder
1 1/2 tsp smoked paprika
1 1/2 tsp dried thyme
2 tsp paprika
2 tsp crushed chipotle Pepper
4-5 tbs olive oil

For Fajitas
1/4 sliced red, green, yellow, orange, pepper each
1/4 sliced red onion lengthwise

For Black Beans
2 cans black beans
1/3 cup water
1 tsp salt + pepper
1/4 cup diced red onion
2 tbs mined garlic
1 tbs chili powder
1 tsp cumin

For Guac
2 Avocados
1/2 diced jalepeno
1/4 cup diced red onion
1/3 cup chopped cilantro
Lime juice
Salt + pepper to taste

For Pico
1 large tomato diced
1/2 diced jalepeno
1/3 cup chopped cilantro
1/4 cup diced red onion
Lime juice
Salt + pepper to taste


Marinate jackfruit for at least 30 mins. Meanwhile chop all your peppers and onions. Sauté the fajitas until soft and set aside. Add black beans + all other ingredients in a medium pot and simmer for 10-15 mins. Pan fry the marinated jackfruit until crispy and cooked through. Mash avocados and add other peppers + onions to combine for guac. Repeat for pico and season to taste. Assemble your bowl with cilantro lime rice and enjoy
