5 tomatoes
2 bell peppers
1-2 jalapeños
1/2 white onion
4-5 cloves of garlic
1 bunch of cilantro
Juice of 2 limes
Olive Oil
Tortillas of choice


Pre heat oven to 400ºF. Chop the peppers, tomatoes and onions into large pieces and place on a parchment lined baking tray. Add the cloves of garlic to the tray and drizzle with olive oil along with salt and pepper. Roast veggies for 35-40 mins. Let cool slightly then transfer to a blender along with the bunch of cilantro and lime juice until desired consistency is reached and season to taste. For tortilla chips, cut into quarters and fry until golden and crispy, season with salt right out of the oil. Assemble plate and enjoy.
