INGREDIENTS

Pasta of choice
1/2 of a large onion
1 whole fennel bulb
2 heads of garlic
Oil to coat
3 tsp salt
3 tsp pepper
2 tbs dried basil
1 tsp dried coriander
1 1/2 cup vegan cream cheese
Scallion and red pepper to garnish



INSTRUCTIONS

Preheat oven to 400°F. Chop the fennel and onion and transfer to large baking dish. Coat in oil and spices and toss to combine. Add in garlic heads with tops cut off. Cover dish with foil and roast for 45 mins to 1 hour. Remove from oven then add in roasted garlic and cream cheese, mix to combine then add cooked pasta and mix all together. Serve with scallion and red pepper to finish.
