1 Can of Lentils, drained and rinsed
1/2 of an Onion
1/4 of a Red Bell Pepper
4-5 White Mushrooms
1/2Cup of Gluten-Free Oats
2 tbs of Ketchup
1 tsp each:
Smoked paprika
Dried thyme
Garlic powder
Onion powder
Nutritional yeast

Burger sauce
1/3 cup vegan mayo
3 tbs ketchup
1 tbs mustard
2 tbs sweet relish
Squeeze of lemon

Add your peppers, onions and mushroom to a food processor. Pulse until all is roughly chopped and around the same size. Sauté this mixture in a pan over medium heat until most of the moisture has cooked out (optionally sprinkle salt to draw out more water). Remove from pan and set aside. In a small food processor add the oats and spice and blend until roughly combined. Then in a large bowl add the lentils, cooked veggies, blended oats and ketchup and mash to form the patty mix and it holds shape. Form patty on a tortilla and cook patty side down and optionally add a weight on top to keep it flat. Flip after about 3-5 mins, add cheese and steam to melt. For burger sauce add all ingredients in a small bowl and mix. Then assemble with toppings of choice and enjoy.
