INGREDIENTS:
Pasta of choice
1/4 of a chopped onion
1/4 of a chopped bell pepper
1/2 cup fresh basil
1 can coconut milk
4 tbs coconut oil
1 tbs Creamy Peanut Butter

For curry blend (1 tsp each):
Salt
Pepper
Curry powder
3-4 minced garlic cloves
1 inch minced ginger
Onion powder
Paprika
Nutritional yeast
Dried coriander
Squeeze of lime

INSTRUCTIONS:
Boil water and add pasta. Meanwhile sauté peppers, garlic, ginger and onion until tender. Make a well in the middle of the pan, add in coconut oil and spices, stir to form a paste and incorporate veggies. Once incorporated add in coconut milk, peanut butter and stir to combine and let simmer for 5 mins. Strain pasta and add to sauce, add in sliced basil and fold into the noodles with the sauce garnish with more fresh basil, red pepper flakes and a squeeze of lime (optional). Serve and enjoy!
