For Fritters

1 large ripe plantain
¾ cup chickpea flour
2 tbsp brown sugar
1/4 tsp salt
1/2 tsp cinnamon
1 tsp vanilla extract
1/4 cup water
1/2 tsp baking powder

Grapeseed or Avocado oil for frying

For Spiced Ginger Sauce

½ inch thumb of ginger
½ apple
2 tbs monkfruit sweetener (or sugar)
¼ tsp each:
1 cup coconut cream
3 tbs tahini


For Sauce

Add in all ingredients and blend until smooth.
For Fritters

In a mixing bowl add the flour, brown sugar, salt, baking powder, and cinnamon. Whisk to combine. Set aside. In a larger mixing bowl, peel the plantain and mash fully with a fork or potato masher. Add in the water and vanilla, mix. Add in dry ingredients and fold together with a spatula. Once mixed, heat oil on med-hi heat, scoop batter with a spoon and lay gently in the oil. Cook for 2 mins on each side or until golden and crisp. Optionally top with powdered monkfruit sweetener and cinnamon or maple syrup and enjoy.
