INGREDIENTS:
6-8 semi-ripe/ripe plantains
1 wheel @miyokoscreamery vegan mozz (grated)
2 cans of green jackfruit
2-3 bell peppers
1/2 of a large onion
2-3 cups white mushroom
1 can/jar tomato sauce of choice
2-4 cups of cheese sauce (my recipe can be found on YouTube)

INSTRUCTIONS:
Boil jackfruit for 10 mins (to removes brine flavor), press to remove liquid and sauté with chopped peppers, onion, and mushrooms. Once sautéed, add tomato sauce and set aside on low heat .Peel and slice plantains into semi thick strips. Fry plantains on both sides until golden and set aside. Grate vegan cheese and prep cheese sauce. Assemble lasagna (plantain, sauce and veggies, cheese sauce and repeat.). Top with grated cheese and bake at 355°F for 25 mins. Let cool and serve.
