INGREDIENTS

For Broccoli
2-3 large broccoli crowns
Oil to coat
1/2 tbs salt and pepper

For Red Pepper Sauce
4 roasted red peppers
1/2 clove of garlic
1/4 cup cashews
5 tbs nutritional yeast
2 tsp crushed red pepper flakes
Pinch of salt
Squeeze of lemon

Garnish with toasted pumpkin seeds, olive oil, and lemon zest



INSTRUCTIONS:
Set oven to 400°F. Cut broccoli into large wedges and lay on a baking tray. Coat in oil, salt and pepper and roast for 30 minutes. Meanwhile add all red pepper sauce ingredients to a blender and blend until smooth. Plate with a layer of sauce followed by the broccoli and garnish with toasted pumpkin seeds, olive oil, and lemon zest. Enjoy.
