INGREDIENTS

Crust:
1 cup medjool dates
1 cup almonds
1/4 cup coconut shreds/flakes

Filling:
2 cups soaked cashews
1 can of full fat coconut milk
1 cup maple syrup
Juice of 1 lemon
Pinch of salt
Splash of vanilla

INSTRUCTIONS:
Add dates coconut and almond to a blender or food processor and blend until combined. Spread on a parchment lined spring pan. Set aside in the freezer. In a blender or food processor add all filling ingredients and blend until smooth. Pour mixture over top of crust and set in the freezer for 4 hours (minimum). Once set, add toppings of choice and serve.
