For Roasted Carrots

1 bunch of carrots
4 tbs avocado oil to coat
Salt and pepper to taste

For Carrot Top Pesto

2 bunches of carrot tops
1 tsp salt + pepper
1/3 cup nutritional yeast
4 cloves of garlic
3 tbs hemp seeds
Squeeze of half a lemon
About 1/2 cup olive oil


Slice carrots in half length wise. place on parchment lined baking tray coat in oil, salt and pepper. Roast at 400ºF for 35 mins. For pesto, blanch carrot tops in boiling water for 2 mins then plunge in ice water. Squeeze out excess water. Place in blender along with all other pesto ingredients except oil. Blend until roughly combine then stream in oil until smooth. Serve and enjoy.
