For Chickpeas
1 can chickpeas
1/2 chopped red bell pepper
1/3 chopped onion
Adobo seasoning blend
Oil to coat

For Jerk Mushrooms
2 sliced portobellos
Dry jerk spice blend:
1 tsp Salt
1 tsp Pepper
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Dried Thyme
2 tsp Allspice
1/2 tsp Cinnamon
1/2 tsp Cayenne

1 Beet sliced in batons
2 -3 cups of brussels sprouts
2 cups fingerling potatoes

For garlic + herb sauce
1/2 cup vegan mayo
1 garlic clove
3 tbs plant milk
Pinch of salt and pepper
1/4 cup chopped scallion
2 tsp dried dill
1/2 tsp red pepper flakes
Squeeze of half a lemon

Toss each ingredient in oil and the spices listed above. Line on a baking tray and roast at 385°F for 35-40 mins. Blend sauce ingredients until smooth and set aside. Once finished roasting, build your plate and enjoy.
