For dough

2 1/2 cups flour

1 cup water

1/2 tsp salt

2 tbsp olive oil

For filling

3 medium sized potatoes

1 tbsp olive oil or vegan butter

Salt & pepper, to taste

Vegan cheese


For the dough, mix all ingredients together in a bowl and knead until dough is smooth and the bowl is relatively clean. Cover and set aside for 30 mins. Meanwhile, boil potatoes until fork tender, mash and season. Set aside. Cut dough out into equal portions, roll out and fill with vegan cheese of choice and potatoes. Close it up, roll it out and fry in a hot skillet until golden on each side. Brush with the herb + garlic butter and enjoy.•
