1 pack spaghetti
1 cup cooked lentils
1 cup sliced mushrooms of choice
1/4 of a leek
1/4 red bell pepper
1 can of coconut milk
2 tbs coconut oil
For curry blend- 1 tsp each of:
Garlic powder
Onion powder
Ginger powder
1/2 tsp cayenne

Bring water to a boil and add pasta. Meanwhile, sauté leeks, pepper, mushrooms and lentils until soft and tender (add lentils last). Set aside. In the same pan, add coconut oil and spices, stir to form a paste then add can of coconut milk. Stir to combine. Strain pasta and add to the sauce along with other veggies. Mix until combined. Serve and enjoy
