INGREDIENTS:
Filling:
* 6-8 granny smith apples
* 1/2 cup brown sugar
* 1/4 cup cane sugar
* 1/4 cup maple syrup
* 1/4 tsp nutmeg
* 1/4 tsp salt
* 1/2 tsp vanilla
* 2 tsp cinnamon
* zest from 1 lemon
* 2 tbsp lemon juice
* 2.5 tbsp arrowroot powder

Crust:
4 1/2 cup flour
1 cup vegan butter or solid coconut oil
2 tsp salt
2 tbs sugar
3/4 – 1 cup ice water

INSTRUCTIONS:
Filling:
Peel and slice your apples. Then into a large skillet or pot, add in the apples, sugars, syrup, cinnamon, nutmeg, salt, vanilla, lemon juice and zest. Cook on medium heat until apples are slightly tender. Once almost done, add in the arrowroot powder, stir to combine, then remove from pan into another dish to cook while you make the pie crust.

Crust:
To a food processor, add in flour, salt, sugar, and vegan butter or coconut oil. Pulse until butter is incorporated and holds shape when pressed between your fingers. Then blend on high speed and stream in the ice water slowly. Once dough has come together, turn out onto work surface and for into large ball. Divide dough into 2 equal pieces and set one aside. Roll one piece out to cover your pie pan and shape accordingly, trim any excess off the sides. Dock the bottom of the crust with a fork all over to prevent air bubbles. Set aside. Add in your filling and spread out evenly. Roll out you second piece of dough and use to shape whichever design you want in top. You could simply place another sheet right over and you’ll be set. Bake at 350 for 50-60 mins and enjoy.
