INGREDIENTS:

1 3/4 cup chickpea flour

1/2 cup cacao powder

1 tsp baking soda/powder

1 1/2 cups organic cane sugar

3/4 cup melted coconut oil

1/2 cup non-dairy milk of choice

1 tsp maple syrup or vanilla extract

1 tbsp chia seeds + 3 tbsp water

INSTRUCTIONS:

Mix chia seeds and water and set aside to thicken. Preheat oven to 375 degrees F. Combine sugar, oil, non-dairy milk, and maple syrup/vanilla extract in a bowl until homogenous. Once combined, add in flour, cacao powder and baking soda along with chia seed “egg”. Mix all together. Pour combined batter into parchment-lined baking pan and distribute evenly. Bake for 28 minutes and let cool.
