INGREDIENTS:
Pastry:
2 cups flour of choice
4 tsp baking powder
2 tbsp sugar
1/4 cup cold vegan butter
1 cup almond milk
Filling:
1/4 cup soft vegan butter
2 tbsp cinnamon
1 to 1/2 cup brown sugar
Icing:
1/2 cup powdered sugar
Splash of vanilla
1 to 2 tbs almond milk *Can add more milk or sugar to thicken/loosen*
INSTRUCTIONS:
In a mixing bowl, add flour sugar and baking powder, whisk to combine. Once combined, cut in cold butter with fork/whisk until little pebbles of butter are incorporated. Make a well in the middle of the mixture and add almond milk. Mix to until dough forms. Once formed, turn out dough onto floured work surface and knead for about 1 min. Roll the dough out into a large rectangle. Coat the rolled dough with soft butter, then add brown sugar and cinnamon. Roll the dough up and cut out the pastries. Butter or oil your baking pan, put in pastries and bake at 400 degrees Fahrenheit for 10-15 mins. While rolls are cooling, prep the icing. Plate up and top with icing.
