2 cups All-Purpose Flour

2 tsp Baking Powder

1/4 tsp Baking Soda

Pinch of Salt


1 1/4 cup unsweetened plant milk

1 Tsp Apple cider vinegar

1/4 cup Avocado oil

1/3 cup Monkfruit Sweetener (or cane sugar)

1 Tsp Vanilla Extract


1 Cup All-Purpose Flour

2/3 Cup Brown Sugar

1 Tbsp Cinnamon

1/4 Cup Neutral Oil

2 Tbsp Vegan Butter

Pinch of Salt


Preheat your oven to 350F and line an 8×8-9×9 baking pan with parchment paper. In a bowl add all dry ingredients and whisk until combined. Set aside. In a separate bowl, add all wet ingredients and whisk until combined. Combine wet and dry ingredients. Don’t over mix at this stage. Set aside to make the streusel. To make the streusel, add all the ingredients together in a bowl and mix using either your hands. Mix until combined but it doesn’t need to be fully uniform, you want different sized pieces. Add half of your coffee cake batter to your baking pan and spread it out evenly, Then evenly sprinkle half of your streusel over your batter, gently pat it in. Add the remaining batter to your baking pan and spread it out evenly. Do the same thing with the remaining streusel. Bake for 25-30 minutes. Let cool for at least 10 mins and enjoy!
