4 medium potatoes (2 large)
3 tbs olive oil
1 & 1/2 cups flour


Peel your potatoes and drop into a bowl with ice cold water to prevent browning and remove starch. Bring a pot of water to boil. Once all potatoes are peeled, boil potatoes for 25-30 mins until fork tender. Strain potatoes and drop into ice water. Grate the boiled potatoes into a large bowl. Once grated, turn out onto a work surface and add the flour and oil in a little well in the middle of the potatoes. Slowly mix and form the dough. Once you have a lodge smooth ball cut into 4 even pieces. Bring a pot of water to a boil. Roll out each piece to a long, thin log. Use a bench scraper or knife to cut your gnocchi pieces. Once all cut drop a few at a time into the water until they float. Then transfer into a skillet and fry them in olive oil until crispy and season with salt, pepper, garlic, red pepper, rosemary and parsley. Serve and enjoy.
