1 cup diced yellow onion
1 cup diced green bell pepper
2 cups chopped mushrooms
2 cups cooked lentils
1 cup breadcrumbs
3 tbs ground flax seed
1/2 cup water
2 tsp each:
Smoked paprika
Dried thyme
Nutritional yeast
Garlic powder

For Glaze
4 tbs ketchup
4 tbs A1 steak sauce
1 1/2 tsp maple syrup


In a small bowl, add in the ground flax seed and water, stir to combine and set aside. Chop the onion, pepper and mushrooms. Sauté over med-hi heat until onions and peppers are translucent and mushrooms have released moisture. Add in all seasonings and stir to combine. Then add in the cooked lentils, breadcrumbs, and flax seed mix. Combine everything in the pan then transfer to a parchment lined loaf pan. Pack all of the meatloaf mix into the pan tightly. Mix all ingredients together for the glaze and layer on top a few times to get a nice coating. Bake covered with aluminum foil at 350ºF for 30 mins. Let cool for about 10 mins and enjoy.
