INGREDIENTS:

1 & ½ cup warm water

1 tbs salt

1 tbs sugar

2 tsp active dry yeast

4 & ½ cup all purpose flour

2 tbs neutral oil

2/3 cup baking soda

INSTRUCTIONS:

Add water, yeast, salt and sugar to a large bowl. Whisk lightly to combine and let sit for 5-10 minutes. Once yeast has bloomed, add the flour and oil and mix until dough forms. Knead until dough is smooth. Once kneaded, shape dough into a ball, leave in the bowl covered with plastic wrap or a damp towel to proof for 1 hour. Once proofed, bring a medium pot up to boil with the baking soda. Preheat oven to 450 F.  Turn out dough on a work surface, roll into a thick log and cut into 6 even pieces. Once you have your pieces cut, roll each out to a long, thin rope about a foot and half to 2 feet long. Then to form into pretzel shape by making a U-shape with the rope, holding the ends of the rope, cross them over each other and press onto the bottom of the U in order to form the shape of a pretzel. Place onto the parchment-lined baking tray. Once all pretzels are shaped, submerge each pretzel one by one in the boiling water + baking soda for 30 seconds and place back on the baking pan. After all pretzels have been boiled, brush each with a little oil or melted vegan butter and sprinkle each with kosher salt. Bake pretzels at 450 F for 12-15 mins. Let cool and enjoy.
