Collard Greens:

2 bunches of Collards

1/2 cup neutral oil

1 tbs each of seasonings of choice (I used Salt, Pepper, Paprika, Garlic, Onion)

Sweet Potato Mash:

2 Sweet Potatoes

2 tbs vegan butter

1/2 – 1 tbs cinnamon

2 tbs maple syrup

Pinch of salt


Cut, clean and prep sweet potatoes and collards. Put collards in a pot with water filled 1/3 high. Add oil and seasoning, stir and simmer for 30-35 mins. Meanwhile, Add chopped sweet potato to water and bring to a boil until tender. Strain. Add butter, sweetener, and cinnamon and mash until combined. Serve with Vegan Mac and Cheese and Fried Mushrooms recipes and enjoy!
